
İskender kebab is one of the famous dishes of Bursa region. It is a kind of doner, but the meat, sauce and butter makes it a really loved and special one!
It's called by the name of its inventor Iskender Efendi who lived in Bursa in the late 19th century. Meat was cooked in tandır and barbecue, and Iskender Efendi wanted to try something new. He Found the way to cookon a vertical rotisserie :)
M E T H O D
The meat of Iskender is passed vertically through a bottle. It is cooked in coal fire.
The outer layer is shaved like a leaf with a rotating blade.
These slices are spread over the pieces of buttered pide.
After the yogurt is laid next to it or with spreading (whipped yogurt), the butter and tomato sauce are served to the service.

I N G R E D I E N T S

2 tbsp Butter
1 tbsp Tomato paste
1 tbsp Chilli powder
1/2 cup of Tomato juice
1 bowl of Yoghurt
300g Tenderloin
(Tenderloin is very similar to İskender's meat)
Flatbread or Pitta bread
Salt
Oil
M E T H O D

Place the tray in pre-heated oven which is 200 degrees (400 F).
Take them out in about 5 minutes.
We just want them to warm a little and become more crispy!

For the Sauce,
We add to 2tbsp of butter. We wait for the butter to melt, and then add the tomato paste.
We stir untill the raw smell of tomato paste is gone. After that, we add the chilli powder
and tomato juice. We will wait until the sauce comes to a boil then lower the heat.
Use your fingers as a boundary and try to cut the pieces as thin as possible. Season them all with salt and pepper. Drizzle some oil on them. They are ready to cook! :)
(The meat is sliced, so it will take about 2-3 minutes to cook. We cook them on the hot pan )
